Our Belated Sunday Dinner

  Hello, hope you are having a splendid evening! I've had a very slow morning, that is...getting around slow. I really wanted to get going early especially getting this post up early but...didn't make it.
  The weather changed here again with cold mornings and mid-seventy to 80 highs. It really takes a toll. Instead of pushing it, I allowed myself time to adjust to avoid any pain...It has worked out well. 
On another note:  Since I didn't have the chance to cook dinner Sunday, I thought I would do so last evening. It was late when I finished...I decided to post it today. I prepared a recipe from my Mom's sister who lives in Arizona. She wanted me to try it out... a Sausage Noodle casserole. (I'm sorry, my pics are off a bit)

                                 

This was before I put the casserole into the oven to brown the cheese and bread crumbs on top

                                   

When you click on the servings on the plates, they are hardy helpings because I heated it over and included helpings for my 3 babies. When I was cooking, Ashley stayed in the kitchen sniffing the air until I finished. We didn't eat until later when James came in from work. They all ate hardy and loved it...so did hubster!

                                   


                                   
I made a simple salad of sliced cucumbers, onions, tomatoes, and cracked black pepper. This one is without the dressing
                                  

And, this one is with a creamy buttermilk dressing. I used sour cream, buttermilk, salt, pepper; mixed it, then allowed to chill.

                                  

Ashley, Amanda and Lovie loved my Quick Peach Cobbler too!

                                  

So,  there are large servings of it too! James asked me to bake another one for him, he's fond of it too!

Sausage Noodle Casserole
1 Roll Owens sausage
Wide egg noodles
1 can cream style corn
1 can whole corn
celery, bell peppers, onions, garlic to taste,
salt and pepper
1 can each celery and mushroom soup
shredded cheddar cheese
fine bread crumbs
Cook sausage, then add veggies together in skillet. This sausage doesn't have fat, so if needed, add a T. olive oil to skillet. Cook noodles, drain. Mix both cans of corn and soups together and heat. Add to meat mixture, heat throughly. Then, add to noodles and mix.
Top with cheese and bread crumbs. Put in oven to brown. Enjoy! 

We sure hope you have a wonderful week ahead. The weather will be iffy here the rest of the week, the weatherman has forecast bad storms, lot of rain with flooding. It you don't hear from me, you'll know why! With this weather, we are sure to have power outages and trees down.We're praying it doesn't get too bad!

  4. Dinner looks great as usual. I've been meaning to try that peach cobbler. It will have to wait awhile. I am on a sugar detox for now. Maybe I will try it next month.

    Oh I so hope you don't get bad weather, which takes your power out. I so dread that, myself.

    You have Wisdom, my Dear! Listen to your body. It will steer you, to how you should proceed. And we never *HAVE* to get things done, at a certain time and all that jazzzz. Not when we are a bit later in life.

    A Momma with little ones, *HAS* to do lots of things NOW! But happily, not us, anymore. :-)
