How are you? Or, as the late Justin Wilson, use to say,"How ya'll are, I'm glad for you to see me, I guarantee". He was a great Cajun cook from South Louisiana and had his own cooking show!
Well, I am happy to report, our house is back to normal! James went to work Friday and didn't have to come back home. He was up early today, and out running errands...I am so thankful to our Heavenly Father!
My daughter asked me too many times to make her a batch of peanut brittle, and I kept putting her off, all the while meaning to do it. So, I awoke early today with this being first on my to-do-list. I could not get picture of the process of making it, because James had to leave at the worse time.
However, I do have the end results. I will have to post this again when someone is in the kitchen with me, because I have to work really fast to get the mixture spread on the sheet.
In this shot, the brittle has hardened, and the crumbs there...is where I started to break it into pieces. Do you see the pieces that were broken? I guess not, because the hubster swiped it and ran from the room! That's because he knew I was a nano-second behind him with my big spoon! lol.
The brittle is a bit sticky from the start, so I always layer it on wax paper in the container to allow the pieces to stay apart. Doing it this way will eliminate having to handle it any further. Put a final sheet of wax paper on top and cover the container.
This batch made 1-1/2 pounds of peanut brittle for Daun, minus the 1/2 lb. hubster swiped from the pan! lol!
We sure hope you are having a delicious weekend and spending quality time with family, and friends. If you are experiencing cold weather, make sure you keep warm and don't forget about your fur-babies...they love curling up by the fire too! Our three have been keeping the floor warm by the heater all day! lol.

Just a quick post with information about problems with blogger.
If you are experiencing trouble with white screen, not being able to comment on others blog, or getting to their blogs...you are not alone!
One of my blogging friends, I won't say her name because I forgot to ask, pasted this good tip along...switch/download Google Chrome. It is Free! You will have to go to the site and see if you are compatible.
I'm here to tell you... I love this feature! It loads fast, and your pics up/download fast too. There may even be better features than this one, but for me now, this one is sufficient for me! Thank You dear friend!
Hubster stayed home another day and feeling better after a little R&R. Thank you all for your lovely comments and prayer. He will try it again tomorrow...Doc didn't give the okay... and I am not supporting him on this one, but maybe, just maybe he will be able to put in a full day! Only God knows. Or, as my Grandma use to say, "The Lord takes care of fools" lol. This is so funny to me even now, and James is laughing like crazy! So, we shall see.

One of the greatest gifts of all doesn't come in a box with fancy wrapping. They are often the moments when someone...may even be a stranger...helped you , inspired you, surprised you, believe in you or went the mile for you. The greatest gift to that person from you is a simple "thank you"...it can mean the world to him or her.
The opportunity to say a heartfelt "thank you" can easily be forgotten today in this fast pace life, if we allow it. However, now's the time to pause and give thanks to those who have touched us in some way, even a small way!
It is not too late to acknowledge the people for whom we are truly grateful. For example, a friend who hosted you at her home; a gracious party hostess; a welcoming neighbor, a teacher who's extra attentive to your child...even one of your teachers who touched your life in a way that helped you through life. Or, a person who touched your life and made it better. The list doesn't end here.
Even if the "thank you" is long overdue, it will still mean so much to the person receiving it. The best way to do this is by sending a hand written "thank you".
I still have a card that I received from a neighbor when we lived in Florida. We had fruit trees in our yard and we knew she liked oranges, limes and pink grapefruit. So, we would leave a basket on her step in the morning when we picked from the trees. Her beautifully written "thank you" note meant so much. I often read it to remind me of those day living in Florida.
Is there someone you have forgotten? Your heartfelt "thank you" will mean the world to them...put a smile on their face and in their heart today!
