Amazing and Awesome Power


Good Saturday Afternoow, I sure hope you are having an awesome day. I know from visiting, some of you have plans of visiting, yard sells, cleaning and rearranging; baking, cooking and getting thing together for Sunday. Quite a busy day for most of you.
  James and I are porch sitting today and watching neighbors and folks' in the community scurry about with seemingly plenty to do.
Children are in the park laughing and playing although it rained last night. I suppose it is a good way to get them out of the house on a busy day.
  Our porch sitting also including watching the skies for clouds, but it was too cloudy. We talked about them and decided to find something to research. We found some rather awesome weather pics. Tornadoes, wall clouds, rare clouds, amazing storms, even a fire tornado. Pic of hurricane in the Bermuda Triangle, ocean waves, awesome rainbows, etc. We'd like to share them with you. Enjoy!

How to Make Creole Cbbage Rolls


We are experiencing a big change in our weather today! Hello everyone, I'm sitting here writing this post and had to reach for my sweater. I am actually cold! This morning it was a cool 53 degrees, and although it is 75 now, it feels as if it is still be in the 50's.
   Nevertheless, tomorrow might be better, right? Well, if I can get my wheels back on track and rolling properly, I can tell you about these cabbage rolls. This is my first time preparing them. This recipe is really simple: 1 tablespoon salt, 1/2 lb. sausage (I used Owens because I was out of Italian), 1-1/2 cups water, 1-14oz. can diced tomatoes, 1 box Zatarain's Spanish Rice, 1-med. head cabbage, (core removed), 1- 8 oz. can tomato sauce.
  Heat oil in skillet on med-high. Add sausage, cook and stir til done. Stir in water diced tomatoes, and rice mix...bring to a boil. Reduce heat to low and cover, simmer 25 minutes til rice is tender. Remove from heat. Let stand 5 minutes.  
  Bring 4 qts. lightly salted water to boil in large pot. Drop cabbage, stem-side down into water. Reduce heat to low, simmer about 20 minutes. Remove cabbage and carefully remove outer leaves. Always return cabbage to water when you have enough leaves to fill, then begin the process of removing outer tender leaves again. 
  Preheat oven to 350 degrees. Place about 1/3 cup or less of rice stuffing near the core end of each leaf. Fold inside of leaf over stuffing, then roll  up. Place rolled seam-side down in a 13x9" baking dish. Pour tomato sauce over the top. Bake app. 45 minutes or until cabbage rolls are tender.

 The last pic is before putting into oven. I had to assist James and got into other chores and forgot to show the baked ones and plated, but they came out well and were very tasty. I didn't serve them with anything, they were yummy with a tall glass of iced tea.
  Hope you've had a pleasant day...sorry, it takes me so long to get a post up...I started on this one much earlier today. As James so aptly phrase it, "better late than never". Oh, how I dislike this phrase!
