Good Saturday Everyone


  What a cold and cloudy morning we have today! Hope you are enjoying yours'!  That's quite okay with me, because I have plans for today.
  First, I really want to thank you for all your words of encouragement and showing us so much love. I know I have not been my usual self lately...barely going through the motions, and I'm  honestly trying hard to keep things positive, but failing miserably I'm afraid. I apologize and pray that I'm feeling better soon.
 Please know, your being here has given me that extra push that I need to keep going, and for this I am truly grateful. 


  As I stated above I have plans today and they are spending the day with my two Country Sampler. I love to peruse each page filled with ideas and inspiration. So, It's back to bed with my fur-baby Ashley as we enjoy our magazines.
  Oh, someone asked what about the other two, I only mention Ashley? Well, they simply do not have any interest in books... regardless! I suppose they leave all that book learning to Ashley. lol.
Amanda will hide underneath the bench at the foot of the bed and Lovie goes searching for mischief...like checking to make sure that I forgot to move a scarf hanging to low, so she can pull everything off to the floor. I think it gives her great pleasure seeing everything fall as she stands with her head askance admiring her handiwork. Don't worry, she moves very fast when it starts to tumble. That's our Lovie!
Sorry I hit the publish button when they started to bark, startled me!

Our Belated Sunday Dinner

  Hello, hope you are having a splendid evening! I've had a very slow morning, that is...getting around slow. I really wanted to get going early especially getting this post up early but...didn't make it.
  The weather changed here again with cold mornings and mid-seventy to 80 highs. It really takes a toll. Instead of pushing it, I allowed myself time to adjust to avoid any pain...It has worked out well. 
On another note:  Since I didn't have the chance to cook dinner Sunday, I thought I would do so last evening. It was late when I finished...I decided to post it today. I prepared a recipe from my Mom's sister who lives in Arizona. She wanted me to try it out... a Sausage Noodle casserole. (I'm sorry, my pics are off a bit)

                                 

This was before I put the casserole into the oven to brown the cheese and bread crumbs on top

                                   

When you click on the servings on the plates, they are hardy helpings because I heated it over and included helpings for my 3 babies. When I was cooking, Ashley stayed in the kitchen sniffing the air until I finished. We didn't eat until later when James came in from work. They all ate hardy and loved it...so did hubster!

                                   


                                   
I made a simple salad of sliced cucumbers, onions, tomatoes, and cracked black pepper. This one is without the dressing
                                  

And, this one is with a creamy buttermilk dressing. I used sour cream, buttermilk, salt, pepper; mixed it, then allowed to chill.

                                  

Ashley, Amanda and Lovie loved my Quick Peach Cobbler too!

                                  

So,  there are large servings of it too! James asked me to bake another one for him, he's fond of it too!

Sausage Noodle Casserole
1 Roll Owens sausage
Wide egg noodles
1 can cream style corn
1 can whole corn
celery, bell peppers, onions, garlic to taste,
salt and pepper
1 can each celery and mushroom soup
shredded cheddar cheese
fine bread crumbs
Cook sausage, then add veggies together in skillet. This sausage doesn't have fat, so if needed, add a T. olive oil to skillet. Cook noodles, drain. Mix both cans of corn and soups together and heat. Add to meat mixture, heat throughly. Then, add to noodles and mix.
Top with cheese and bread crumbs. Put in oven to brown. Enjoy! 

We sure hope you have a wonderful week ahead. The weather will be iffy here the rest of the week, the weatherman has forecast bad storms, lot of rain with flooding. It you don't hear from me, you'll know why! With this weather, we are sure to have power outages and trees down.We're praying it doesn't get too bad!

Time Well Spent


 I just wanted to let you know I'm home, and to thank you so very much for your love, concern and comments during our time of need! James and I really appreciate each of you...you have proven to be the best of friends and we both hope you will be a part of our lives for a long time to come.
  Thanks also, to those of you who have chosen to follow us...and we extend to you... a hardy welcome to our house!
  My three sister's and I had a very nice Sister's weekend together. It was time well spent with just being together, talking, planning, shopping, dining, etc. They spent the nights at mom's house, however, I drove back home to be with James each night in time to spend mid-eve with him. 
 
  He is in better spirits and has made peace with the fact that he has to live one-day-at-a-time with this illness, and prays he will/can accept whatever comes! We are both determined to put this in God's hands and allow Him to direct our steps as we walk with Him.
This is the right way to go!
  I will get back with you with my next post...I have missed visiting with you...I'm a bit tired...so I'll rest a while and then visit a little...
