Fried Shrimp New Orleans

I didn't get a chance to post last night's meal, but here it is. Fried Shrimps and Fries New Orleans.  I used a regular batter, but added a little beer to the batter of: 1 cup of milk, 1 egg, 1/4 cup beer, cayenne and cracked pepper, salt if desire. Dip shrimp from egg mixture to flour then back again. Drop into hot oil, allow to brown evenly about 2 to 3 minutes.
I prepared the fries, then seasoned with cajun seasoning and cracked black pepper, sprinkle a bit of flour on them to lightly coat and fry until browned.
I almost didn't buy the tomatoes for the salad, the price today was $4.25 a pound! One was slightly over a pound! Oh do we need our garden!

The salad was drizzled ever so slightly with a bit of olive oil, then tossed. If you look closely, you can see the cayenne pepper on the shrimp. I had to purchase smaller ones because of the ridiculous price!
When  I seasoned them, I got a bit heavy-handed! They were hot, hot, and they were good! The fries were done just right. I usually have garlic bread with this meal, but I didn't this time. Too many carb the entire day. Try this meal...it is delicious and simple! Enjoy!

Simplicity Is The Key To This Meal

A New Orleans Po-boy, simple, but oh so-so good and filling. There are so many different ones, chosing is only half the fun. Eating one is a culinary delight!
This is one of my creations, Chicken Poupon. The chicken strips are marinated in the dijon for an hour, then put into the hot skillet with 1 tablespoon of olive oil, and cooked til tender, about 12 to 15 minutes. Remove an place on paper towel. Gather the fixings and toasted bread.
The browned crust-like substance on the chicken is seasoning, and give the meat its flavor. Yummy!See the juices inside!
Now you are ready to build. This is your choice. Did you know folks like their fixings a certain way on their Po-boy. My plate is garnished with sliced pineapples and ripe olives. This is so tasty with the meat. Cut them in half and you're set!
Try them, you'll want them everyday. Not only are they good, they are quick and easy to prepare. Enjoy!

A Spaghetti Supper?

Yes, once in a while I have a taste for this dish, but I don't like all the stuff. I don't know if I've told you this, but we don't eat any red meat, and just so you'll know, I eat some pork and chicken, but not much meat. My hubby James, like lamb and some game. I can't do those! While living in Florida, our doctor advised us to stop eating the red meat, because of some health problems. That was over 20 years ago.
So, getting back to my meal (you know how long-winded I am), I like just  a traditional sauce ( a lot of it) with the spaghetti, al dente, garlic bread with a garden salad, and a hint of oil and vineger. I asked James to stop by the grocery store, and buy dessert. Strawberries or something. Well, you see what he bought. I had my taste buds set for strawberries and whipped cream. Oh well, you take what you get however, the melon was refreshingly good.lol.
Oh how I wish you could pull up a  chair to join me...I know you would enjoy it!  The sauce is divine! Hugs and kisses! Luv-Loretta

Take A Walk In My Rose Garden

High winds and pouring rain tore up our rose garden. We managed to get a few shot worth veiwing. Wind was high and some may be a bit fuzzy, but for the most part, they are viewable. I've included the late blooming azealea. I have always loved the red color. The roses that look as if they are coming out of the sky are climbers, the lower ones were all destroyed in the storm. These were buds that opened afterwards. Enjoy your walk.

Sunday Dinner

Good Sunday afternoon. Hope you are having a splendid weekendW I have not felt the best for a few days, but just had to get up and cook hubby dinner today. Nothing special, just whatever I could find and not have to spend too much time in the kitchen.
I decided to cook a meat loaf with a tomato and garlic puree, steamed rice, green peas with a butter sauce, an arugula salad with a vinaigrette, corn-bread sticks, and for dessert chocolate cheese cake with whipped topping.

Please overlook my dishes, I didn't feel up to taking down others, so I'm using all everyday ones.
And, about that cheese cake...h-u-b-b-y! He thought I cut the cheesecake for him, so he forked a piece out the side. Snapping the pictures was my answer instead of ...need I say anymore!
Well as always, wish you were here! Please, if you want the recipe to any of this meal, let me know. My e-mail is on the home page. My energy is low and I need to get to meds. Luv-You!
