Good Morning Lovies, hope you are having a nice morning. The rain has ceased and the sun promises to shine today. I know this may sound a bit nuts but, I like this time of the year because of the dark, overcast days. I told you...maybe I should move to Alaska where days are nights, right? lol!
My outing yesterday didn't go as well as I hoped. Having to walk was the worst...I was in so much pain, I enlisted the help of one of the employees in the market to help me back to the car. Believe me, I was happy to get back to the safety of home! Remember that saying, 'heart willin' but, body killin'... yeah, its an ole' saying!
Before I start with the food portion of this post, I want to show you my new backsplash in the kitchen. Because my appliances are stainless, we decided on this design. More to be done soon.

This is my Easy Peach Cobbler. I'd love to claim the recipe however, I copied from my grand, and I have seen it everywhere! So, where did it originate?
This one was a bit dry because I used a different casserole dish. (Stick to the recipe) It boiled over taking away all the tasty juices!
Needless to say, it was good! James had his with a scoop if vanilla ice-cream. He wanted seconds, but I was stern! He has to wateh his sweet intake too!
Easy Peach Cobbler Recipe
1 stick of butter
1 cup plain flour
1 cup sugar
1 cup milk
1 tsp. baking powder
1/2 tsp. salt, (I used 1/8 because of low salt intake)
1 large can peaches (28 ounces)
1 tsp. vanilla (I used rum extract also)
You can also add spices if want, nutmeg, cloves to taste
Melt butter in deep casserole dish. Mix together in bowl flour, sugar, baking powder, salt and spices. Add milk and flavoring. Stir to combine batter. Pour batter over melted butter; then add peaches juice and all. Bake 1 hour in 350 degree oven. Serves 4-6.
