Shrimp Creole

Are you finding it hard to find what to cook or just what you want to eat? I tell you it has become a struggle for me everyday! And, there is no need ask, because it's always the same from the family, "Whatever you want". Well, last night's dinner was just that! When the onion, peppers, shrimp, etc. started to fill the kitchen with those delicious aromas, all gathered around waiting for me to finish. I made a big salad and had some crusty bread and we sat down to this wonderful Louisiana wonder.

Rich tomato sauce and succulent shrimp! Yum! Yum!
Recipe
2 medium onions, sliced 
1 cup chopped celery (about 4 stalks)
1/4 cup chopped green peppers
4-Tablespoon shortening
(I aways use olive oil)
2-Tablespoons flour
1-teaspoon salt
1-Tablespoon Old Bay seasoning
2-cups canned tomatoes
1-lb. cooked shrimp
Hot cooked rice ( enough for each serving)

Method

Brown onions,celery, and green onions in oil. Blend in flour, salt, and Old Bay. Add tomatoes and simmer for 15 minutes. Note: I add a little water if to thick, but I love the thickness. If you want it more tomato tasting, add a can of tomato paste.Taste and add seasoning to taste.) And then, add the cooked shrimp and cook for 1 minute. Serve over hot rice. Enjoy!

Beauty Springs Forth

Good Morning Friends. What a gloomy morning, rain and bad weather has been forecast for us today. We are in for some intense storms. I love rainy days, but the storms are scary not only for me but my fur-babies!
 I walked outside this morning feeling blue and the sky was gray and overcast. I looked at all those leaves that had to be raked; those limbs and pine combs that has to be picked up; and the muck that had to be removed. Oh my, it only added to my blue mood. But, through it all, how can it be? Beauty stood out like a beacon from the ground with colors that were so deep and so honest. How could they possibly be this beautiful in all this dark and gloom?
 How I admired their beautiful smile through it all! Imagine my awe as I looked upon their beauty with faces turned to where the sun should have been. A kiss of early morning dew glistened, and a smile tugged at the corners of my mouth when our faces met.
  How can it be? I mused. Through the hard packed earth full of rotting leaves and debris, yes this beauty seemingly ignored it's surroundings and dutifully performed. After all, it was on cue...the call of nature brought them forth to put on a show, and what a show-piece they are!
  Behold, the daffodil...how graceful and beautiful...their announcement is clear! Spring is in the air!

Mom's Quilt

Good Monday Morning Everyone. Hope you had a relaxing, and peaceful weekend. I don't believe I shared this with you, however my hubby has been with me during my last few postings, and I loved getting his approval. He had surgery and almost two weeks at home with me. Today is his first day back to work and we miss him much. Hope you had a chance to have a look-see at our fur-babies. Remember, I mentioned how much I love to talk about them, but I will try not to bore you.
  I don't have my hubby here with this post, but i'm sure he would like it, since it is about Mom. This quilt is one of my favorites, because of the bold colors. (Hop on over to our blog #2 to see more of Mom's quilts).   
 The white bed-cover was created by my sister Patricia (Pat). A Family of talent. Lord what happened to me? lol.

Good Sunday Morning

We hope all of you are healthy, happy, and joyful this morning. Sunday is important to our family because not only is it a day of tradition, it is a day for family worship, togetherness and family dinner. This tradition has been in our family for over seventy years and counting. 
 Who said Sunday dinner had to be fancy? At our house, we might do fancy occasionally, but having the
family together is more important to my Mother and her five girls.

 Today's menu consist of red beans and rice, with down-home-sausages, home-made Louisiana hot-pepper-sauce, hot buttered crisp fried corn cakes, and for dessert a slice of spiced cake served with coffee.Yum! Yum!
