New Orleans Red Beans and Rice


Good Morning Ya'll! Well, I know this is not Monday...our official day for this succulent dish, but we had company to stop by to visit last eve with James and I got behind. 
   If you know anything about Louisiana cooking, then you know I had to make some changes to the original recipe. I simply, eliminated all meats, oils; reduced the sodium and added more herbs. Here's what I ended with: chopped celery, bell pepper, onions; instead of whole garlic, I used powder, basil, thyme, and 1 bay leaf....all to taste. Prepare the dry kidney beans, rinse, then fill a large kettle with cold water and bring to a boil. Remove from fire and allow to sit an hour. After and hour, return to fire and bring back to boil, then to a low boil. Add all seasonings, adjust where needed remembering to gently stir them. Allow to cook until tender. Some cooks mash the beans, but I like mine as you see them, without the mashed mushy consistency.
  This is still some good eating, especially with the smothered onions, and if that wasn't enough, I pan seared pork chops with onions in a brown sauce. Cornbread recipe from the dietitian went well with them, and roasted veggies...this proved to be a Southern meal fit for a king...
  He enjoyed his portion and later, we had a late snack...sugar and fat free, of course!










Ya'll it doesn't get any better than this...you must try it!

Our day is turning out to be a pretty and warm one. James and I are enjoying porch sitting and taking in this beautiful weather.

    I can't use any of those Ways-To-Read-New-Posts-in-Fav-Blogs. I made a private blog ("My Little Posse"), which I link to on my Sidebar, but only for myself, since it's Private.

    There I put the Blogger Thing, which shows me when new posts are posted, on my Fav. Blogs. It is proving to be the easiest way!!!

    I list the blogs, on there. No Net thing messes with my listing. I can add and subtract them, because it is totally Private and I don't hurt any feelings.

    I love it!!! More so, when I see someone complain about how her Reader Thing is not working correctly.

    HI back to James!!!!! And tell him that I am sooooooo proud of him, for how he is doing-what-he's-supposed-to-do, these days!!!!!! "Auntie" sezzzzzz... He is a Super Hero!!!!!!!!!!!!!!
