Happy Saturday Ladies & Gents

  How are you? Or, as the late Justin Wilson, use to say,"How ya'll are, I'm glad for you to see me, I guarantee". He was a great Cajun cook from South Louisiana and had his own cooking show!
  Well, I am happy to report, our house is back to normal! James went to work Friday and didn't have to come back home. He was up early today, and out running errands...I am so thankful to our Heavenly Father!  
  
  My daughter asked me too many times to make her a batch of peanut brittle, and I kept putting her off, all the while meaning to do it. So, I awoke early today with this being first on my to-do-list. I could not get picture of the process of making it, because James had to leave at the worse time. 
  However, I do have the end results. I will have to post this again when someone is in the kitchen with me, because I have to work really fast to get the mixture spread on the sheet.


In this shot, the brittle has hardened, and the crumbs there...is where I started to break it into pieces. Do you see the pieces that were broken? I guess not, because the hubster swiped it and ran from the room! That's because he knew I was a nano-second behind him with my big spoon! lol.


The brittle is a bit sticky from the start, so I always layer it on wax paper in the container to allow the pieces to stay apart. Doing it this way will eliminate having to handle it any further. Put a final sheet of wax paper on top and cover the container.

 This batch made 1-1/2 pounds of peanut brittle for Daun, minus the 1/2 lb. hubster swiped from the pan! lol! 
  
  We sure hope you are having a delicious weekend and spending quality time with family, and friends. If you are experiencing cold weather, make sure you keep warm and don't forget about your fur-babies...they love curling up by the fire too!  Our three have been keeping the floor warm by the heater all day! lol.

  1. I do wish I could eat peanut brittle. Glad the hubby is feeling better. I downloaded google chrome and I don't see any difference. but I'm not giving up. Hope you have a great rest of the weekend Loretts.

  4. Can't trust those men near anything that smell's good, looks good, or taste good..good thing you had that good old big spoon!
    But, glad to hear James is back to work and stealing peanut brittle..means he's well and happy!

  11. That looks soooo good. I love peanut brittle, but haven't had it in a long time. So glad that James is feeling and doing better. I know it was my blogger hugs that helped bring him through. I thought about you yesterday when I made some chocolate muffins. They will be posted on my blog in a day or so.
