Are you finding it hard to find what to cook or just what you want to eat? I tell you it has become a struggle for me everyday! And, there is no need ask, because it's always the same from the family, "Whatever you want". Well, last night's dinner was just that! When the onion, peppers, shrimp, etc. started to fill the kitchen with those delicious aromas, all gathered around waiting for me to finish. I made a big salad and had some crusty bread and we sat down to this wonderful Louisiana wonder.

Recipe
2 medium onions, sliced
1 cup chopped celery (about 4 stalks)
1/4 cup chopped green peppers
4-Tablespoon shortening
(I aways use olive oil)
2-Tablespoons flour
1-teaspoon salt
1-Tablespoon Old Bay seasoning
2-cups canned tomatoes
1-lb. cooked shrimp
Hot cooked rice ( enough for each serving)
Method
Brown onions,celery, and green onions in oil. Blend in flour, salt, and Old Bay. Add tomatoes and simmer for 15 minutes. Note: I add a little water if to thick, but I love the thickness. If you want it more tomato tasting, add a can of tomato paste.Taste and add seasoning to taste.) And then, add the cooked shrimp and cook for 1 minute. Serve over hot rice. Enjoy!
You know, I rarely cook much since my girls were born. But this looks and sounds delicious!
